Vegan Gluten Free Quinoa Falafel

What You Need:
  • 1 1/2 cups of cooked organic quinoa, chilled
  • A large handful of organic cilantro or parsley, whichever you prefer
  • 1/2 of an organic white onion, chopped
  • 1 1/2 teaspoons of organic cumin
  • 1 teaspoon of organic garlic powder
  • 1/2 teaspoon of sea salt (or more to taste)
  • 1/4 teaspoon of ground black pepper
  • A dash of organic cayenne pepper
  • 3-4 tablespoons of organic oat flour

1. Add all ingredients except the oat flour to a food processor or high powered blender. Blend all ingredients together.

2. Add in the oat flour 1 tablespoon at a time, blending in between to see if more is needed. Blend until combined.

3. Form into balls and place on a cookie sheet or baking stone.

4. Bake at 375°F for 25-30 minutes on each side or until golden brown. (If desired, coat both sides with a little bit of avocado oil for a crisper outer)

5. Serve with lettuce, salata, homemade pitas, and you favorite tahini sauce....mmmmm!
