Vegan Gingerbread Oatmeal

This past autumn I was really loving my apple cinnamon and pumpkin spice oatmeals, so I was trying to come up with a seasonal flavor for Christmas. When I got the idea of gingerbread oatmeal I thought "surely no one else has thought of this before!"

Sure enough I found about a million other gingerbread oatmeal recipes on Pinterest...don't you hate when that happens?! I thought I'd share my totally uncreative recipe anyways incase you're on the lookout for a yummy and healthy holiday breakfast!

I kept the measurements for the spices pretty vague, because I know everyone's preference may be different. I rarely measure when I make oatmeal but I tried to come up with at least some measurements for you guys if you're a recipe-following type person. Feel free to experiment with more or less of any ingredient to find a taste you like best.

This oatmeal is a super healthy way to start your day because of the blackstrap molasses. Organic blackstrap molasses is an amazing source of iron as well as having other benefits such as cancer prevention, stress relief, menstrual cramp relief, skin health, heart health, and much more! I'm not the biggest fan of the flavor so this is a yummy way to sneak some molasses goodness into my body first thing in the morning.

What you need:
1/2 cup of organic rolled oats
1 cup of filtered water or your favorite plant-based milk
One shake of organic ground ginger, nutmeg, cinnamon, and cloves
1/2 teaspoon of organic blackstrap molasses
1-2 tablespoons of organic coconut sugar
Toppings such as nuts, nut butter, fruit, chia seeds, hemp seeds, etc

Add the oats and liquid of your choice to a pan and bring to a boil. Once it's boiling, turn down to medium heat, stirring the oats frequently.

Add in your spices, blackstrap molasses, and coconut sugar, letting the oats cook until they are thick and creamy.

Transfer the oats to a bowl and add your desired toppings. I like to give it a little crunch by adding almonds or pecans and some banana slices for a source of fruit.

Enjoy with a hot cup of coffee and Christmas tunes playing in the background... :)
