What I Eat In A Day | Cozy Vegan Fall Foods

Hi friends! I finally have a "What I Eat In A Day" video up! This video is featuring yummy and warm fall foods that are perfect now that the weather is getting colder.

Keep in mind that this isn't exactly what I eat every single day. I try to mix it up so I don't get sick of things, but this will give you a good idea of how much I eat and what I try to incorporate on the daily. I typically have two breakfasts and have two servings of whatever I make for lunch or dinner.

Everything in this video is ORGANIC and VEGAN!



Breakfast
Cinnamon Apple Oatmeal:
1/2 cup organic rolled oats
1 cup filtered water
A few shakes of cinnamon
1 organic apple, washed
Organic pecans
Organic coconut sugar

Add the oats and water to a pan and bring to a boil. Once it's boiling I usually turn down the heat and let it simmer for about 5 minutes until it's thick and creamy. If it gets too dry I'll add a splash of almond milk before transferring it to a bowl to eat. 

I then add a little bit of coconut sugar for sweetness and top it with the apple and pecans. 

Green Detox Smoothie:

Lunch
Mexican Lunch Bowl:
1 organic sweet potato
Organic olive oil
Organic chili pepper
Organic paprika
Sea salt + pepper
Organic rice
Organic beans
Organic salsa
Organic corn chips
Lime

Cut your sweet potato in half and coat both sides with olive oil (this is optional, but I'm not about that low fat life) and sprinkle with spices. Bake for 40-50 minutes on 350.

Once your potatoes are done, you can assemble your bowl with things like organic rice, organic beans, organic corn chips and an organic salsa. Oh and of course lot's of lime! 

Homemade Salsa:
1 can of organic tomatoes
1 red onion, chopped
1 large handful of cilantro
A few shakes of chili powder
A generous amount of sea salt
The juice of one lime

Place all ingredients in a blender and pulse until desired consistency. 

Vegan Cheese Sauce:

Dinner
Creamy Tomato Soup (adapted and vegan-ized):

*Pro tip: make sure all your canned foods are BPA free!*

  2. What I Eat In A Days are my favorite!! The cinnamon apple oatmeal is right up my alley...cinnamon is the most delicious fall flavor, and oatmeal is so cozy and warming- the perfect healthy comfort food!
