Vegan Frozen Snicker Bites

Y'alllll. Y'ALLLL. You need these in your LIFE. I'm not kidding. Don't waste any more time. Make them now! These little frozen "snicker bites" are addicting. I'm not going to tell you how many I ate in one sitting. I tried to forget about them. I tried to hide them in the freezer. But nothing could stop me.

I know you probably think I'm being a bit dramatic, but I'm serious about my desserts you guys. You'll understand once you make these.

First off, these are vegan, healthy, and can be organic if you choose! I made mine organic because, well you know me :) These snicker bites are made with bananas, date caramel, nuts, dark chocolate, and some sea salt. No added sugar, no dairy, no nothin!

Now, if you still feel guilty about indulging in a little treat, let me go over the health benefits of each ingredient for you.

Bananas- Endless health benefits here. Bananas are known to be anti-inflammatory, fight infections, enhance white blood cells and combats abnormal cells (cancer preventing!), boost energy, lowers blood pressure, and much much more!

Dates- Dates have a lot of nutrients, proteins and vitamins in them and are known to prevent abdominal cancer, boost your energy, help you maintain a healthy weight, are beneficial to the health of skin, hair, and nails, they aid in digestion, and much more!!

Nuts- As I'm sure you know, nuts are healthy fats that our body needs. Key word- healthy fats! Whatever type of nut you choose to use will bring a source of protein, vitamins, energy, and mood benefits to this recipe.

Dark Chocolate (cacao)- I know you've probably heard that dark chocolate can prevent cancer- well it's true! It also can lower the risk of heart attack and stroke, is mood boosting, a source of antioxidants, lowers blood pressure, anti-inflammatory, and much, much more!

Okay great, so now that guilt is out of the question, let's get to making!

What you need:
  • 4 ripe organic bananas (peeled)
  • Date caramel sauce (see below) 
  • Chopped nuts of your choice (I used almonds but peanuts, cashews, walnuts, pecans would be good too!)
  • Organic vegan dark chocolate + a splash of coconut oil
  • Course sea salt
Date Caramel Sauce:
  • 2 cups of organic dates
  • Almond milk
  • A pinch or two of sea salt
Put the dates, a pinch of salt, and almond milk into the blender. I didn't measure the amount of milk used, but I put in just enough so that it would blend into a creamy(ish) consistency. Blend it up and transfer to a bowl. Mine ended up being more of a chunky caramel sauce, but still yummy!

To make the Vegan Frozen Snicker Bites...

Step 1: Peel the bananas and cut them in half and place the bananas on a parchment lined baking sheet, flat side of the banana up.

Step 2: Spread the date caramel sauce onto the top of the bananas, giving it a generous layer- think snickers bars!

Step 3: Sprinkle the chopped nuts of your choice onto the banana. I used almonds!

Step 4: Cut the bananas into little squares and place in the freezer for about 30 minutes so they are easier to work with when coating with chocolate.

While the bananas were freezing, I cleaned up my mess and melted the chocolate with a splash of coconut oil (to make it thinner and easier to coat), and by then the bites were good to go!

Step 5: Place melted chocolate onto a plate or bowl and use to generously coat both sides of the banana bites. This worked pretty well for me and I didn't have a problem with the caramel or nuts falling off! It works best if you get a little messy and use your hands :)

Step 6: Place each chocolate covered bite back onto the parchment-lined tray and sprinkle each bite with a few pieces of course sea salt. Place back in the freezer for an hour or until completely frozen!

Step 7: Tryyyyyy not to eat them all at once, but it's okay if you do. Because they are healthy! Store them in the freezer in a mason jar, freezer safe container, or ziplock bag :)
